Pepper-ific!

The world of peppers is enormous, and the Scoville Heat Unit (SHU) scale ranges from essentially zero heat to millions of units.

The first important point is that peppers are technically fruits, not vegetables. They belong to the genus Capsicum. Their heat comes primarily from capsaicin, which activates pain/heat receptors in your mouth rather than actually burning the tissue.

The Scoville Heat Unit measures the concentration of capsaicinoids responsible for a pepper's perceived heat. The original Scoville test, developed by American pharmacist Wilbur Scoville in 1912, relied on human taste testers. Modern measurements use chemical analysis, which is much more precise.

Bell peppers contain essentially no capsaicin, which is why they aren't hot.

The Bhut Jolokia, commonly called the Ghost Pepper, was once the world's hottest commercially recognised chilli.

Guinness records it at more than 1 million SHU; one cited figure is approximately 1,041,427 SHU.

For perspective, that's roughly 100+ times the heat of a typical jalapeño.

🦂 Trinidad Moruga Scorpion

This is another extremely hot Capsicum chinense pepper.

The Trinidad Scorpion family includes several extraordinarily hot varieties. One historical record holder, the Trinidad Scorpion "Butch T", was measured at 1,463,700 SHU.

🔥 Carolina Reaper — about 1.64 million SHU

The Carolina Reaper, developed by Ed Currie, was the famous record-holder before Pepper X.

Its Guinness-confirmed average was 1,641,183 SHU.

It's roughly 200–600 times hotter than a jalapeño, depending on which jalapeño and which Reaper specimen you're comparing.

And interestingly, the Reaper isn't just about pain. It has a fruity, sweet flavour before the heat really arrives.

☠️ Pepper X — 2,693,000 SHU

Here's the current champion.

Pepper X became the Guinness World Records-certified hottest chilli pepper in 2023, with an average rating of 2,693,000 SHU.

That's astonishingly hot.

It's produced by Ed Currie—the same pepper breeder responsible for the Carolina Reaper. He reportedly spent about 10 years selectively breeding Pepper X for extreme capsaicinoid concentration.

So the current record progression is roughly:

Ghost Pepper → Trinidad Scorpion → Carolina Reaper → Pepper X

And Pepper X is currently sitting at 2.693 million SHU. 🌶️🔥

Why are some peppers so much hotter?

The major factor is the amount and composition of capsaicinoids, especially capsaicin.

Interestingly, the seeds aren't actually where most of the capsaicin is produced.

The highest concentration is in the placenta, the pale internal tissue to which the seeds are attached.

That's why scraping out the seeds can reduce some of the perceived heat: you're removing some of the capsaicin-containing tissue surrounding them.

Why does chilli burn if it isn't actually burning you?

This is one of the coolest things about peppers.

Capsaicin binds to TRPV1 receptors, which are involved in detecting heat and physical irritation.

Your nervous system essentially receives:

CAPSAICIN → TRPV1 → "HOT!" 🔥 → brain interprets burning sensation

But capsaicin isn't actually raising the temperature of your mouth to the degree that the sensation suggests.

That's also why you can feel the heat long after you've swallowed the pepper.

And why does milk work better than water?

Capsaicin is fat-soluble, whereas water doesn't dissolve it particularly well.

That's why drinking a glass of water after eating a brutally hot pepper often doesn't help much—and can even spread the capsaicin around your mouth.

Dairy products contain casein, which can help remove capsaicin from the receptors in your mouth. Guinness specifically notes the role of casein in reducing chilli heat.

So for a very hot pepper:

One final warning: million-SHU peppers aren't ordinary food items. Eating whole Carolina Reapers, Ghost peppers or Pepper X can cause intense pain, vomiting, abdominal cramps and other significant symptoms. Guinness itself notes that extreme chilli consumption can cause serious side effects.
