The Wizard LOVES his Instant Pot. I use it when I am in a hurry and need to reduce the amount of time to prepare dinner. Here is an easy recipe:

Ingredients:

  • 2-3 lb chuck roast
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Instructions:

  1. Set the Instant Pot to sauté mode and add the olive oil. Once the oil is hot, add the onions and garlic and sauté for 2-3 minutes until fragrant.
  2. Add the carrots and celery to the pot and sauté for an additional 2-3 minutes.
  3. Season the chuck roast with salt and pepper, and then add it to the Instant Pot on top of the vegetables.
  4. In a small bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Pour the mixture over the roast.
  5. Close the Instant Pot lid and set it to pressure cook on high for 60-90 minutes (depending on the size of the roast and your desired level of tenderness).
  6. Once the cooking time is up, allow the Instant Pot to release pressure naturally for 10-15 minutes, and then do a quick release to release any remaining pressure.
  7. Carefully remove the roast from the Instant Pot and place it on a cutting board. Let it rest for a few minutes before slicing and serving with the vegetables and gravy.
