Creating the "best ever" salad can be subjective since everyone's taste preferences differ. However, I can suggest a versatile and delicious salad recipe that incorporates various flavours and textures. Feel free to adjust the ingredients based on your preferences:
Ingredients:
- 1 head of lettuce (romaine, mixed greens, or your favourite type)
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 bell pepper, diced (any colour you prefer)
- 1/2 red onion, thinly sliced
- 1/2 cup sliced black olives
- 1/2 cup crumbled feta cheese (optional)
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh mint
- 1/4 cup toasted pine nuts or slivered almonds
- Salt and black pepper to taste
For the dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon honey or maple syrup (optional)
- Salt and black pepper to taste
Instructions:
Wash and dry the lettuce, then tear it into bite-sized pieces and place it in a large salad bowl.
Add the diced cucumber, tomatoes, bell pepper, red onion, black olives, crumbled feta cheese (if using), chopped parsley, basil, and mint to the bowl.
In a small skillet, toast the pine nuts or slivered almonds over medium heat until golden brown and fragrant, about 3-4 minutes. Keep an eye on them to prevent burning. Once toasted, set them aside to cool.
In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, honey or maple syrup (if using), salt, and black pepper to make the dressing.
Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
Sprinkle the toasted pine nuts or slivered almonds over the top of the salad.
Taste the salad and adjust the seasoning with more salt and pepper if needed.
Serve immediately as a side dish or add grilled chicken, shrimp, or tofu to make it a complete meal.
Feel free to customize this salad recipe by adding your favourite ingredients such as avocado, roasted vegetables, grilled corn, or cooked grains like quinoa or farro. Enjoy your delicious and nutritious salad!
