Ingredients:
1 x 3 to 5 pound beef roast (can substitute pork roast of same size)
2 cups beef broth
1 pound carrots (sliced if not baby carrots)
12 to 15 baby potatoes (not peeled) (Peeled and quartered if not baby potatoes)
2 onions quartered
Process:
Set Instant Pot to saute, once heated add 2 tablespoons vegetable oil. Cut roast up into pieces approximately 3" x 6", place in pot, season with lemon pepper (my favourite spice).
Saute the roast pieces rotating to brown all sides. Remove meat from cooker. Turn off Instant Pot.
Add the 2 cups beef broth and use a wooden spoon to scrape all the browned bits that were created during sauteing.
Add the meat back in, add carrots and potatoes - do NOT stir.
Set the Instant Pot to Pressure Cook, (More) and set timer for 35 minutes.
After the time has expired, vent the steam as normal, remove contents and serve.
Optional: I use the broth/juices to make a au jus sauce, but you can turn the Instant Pot back to saute and once bubbling, add flour (a bit at a time) , season with pepper (If you used lemon pepper to season the meat, no seasonings are required), and constantly stir. Boil for approximately 5 minutes.
