- 1 pound (450g) ground beef or turkey
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 1 package (1 ounce) taco seasoning mix
- 2 1/2 cups (600ml) beef or vegetable broth
- 10 ounces (300g) uncooked rotini pasta
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (4.5 ounces) diced green chiles, undrained
- 1 1/2 cups (180g) shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: chopped fresh cilantro, sliced jalapeños, sour cream, avocado, or additional cheese
Instructions:
Set your Instant Pot to sauté mode. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
Add the chopped onion and red bell pepper to the Instant Pot. Sauté for 2-3 minutes until the vegetables soften.
Sprinkle the taco seasoning over the meat and vegetables, stirring well to combine.
Pour in the beef or vegetable broth, scraping the bottom to deglaze the pot.
Stir in the uncooked rotini pasta, diced tomatoes, and diced green chiles.
Close the Instant Pot lid and set the pressure release valve to sealing. Cook on high pressure using the manual or pressure cook function for 4 minutes.
Once the cooking time is complete, perform a quick pressure release by carefully switching the pressure release valve to venting.
Open the Instant Pot and stir the taco pasta mixture. Season with salt and pepper to taste.
Stir in the shredded cheddar cheese until it's melted and well combined.
Serve the taco pasta in bowls, garnished with your choice of toppings like chopped fresh cilantro, sliced jalapeños, sour cream, avocado, or additional cheese.
