Ingredients:
- 1.5 to 2 pounds (680 to 907 grams) beef stew meat, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 3-4 cloves garlic, minced
- 3 medium-sized carrots, peeled and cut into chunks
- 2-3 medium-sized potatoes, peeled and cut into chunks
- 2 celery stalks, sliced
- 4 cups beef broth
- 1/2 cup red wine (optional, can replace with beef broth)
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
Instructions:
Turn on the Instant Pot and select the "Sauté" function. Add the vegetable oil and let it heat up.
Season the beef stew meat with salt and pepper. Add the seasoned meat to the Instant Pot and brown it on all sides. You may need to do this in batches to avoid overcrowding the pot.
Once the beef is browned, remove it from the Instant Pot and set it aside.
In the same pot, add the chopped onions and sauté for a few minutes until they become translucent. Add the minced garlic and sauté for an additional 30 seconds.
Pour in the red wine (if using) to deglaze the pot, scraping the bottom to loosen any browned bits.
Add the beef broth, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and bay leaf to the pot. Stir everything together.
Return the browned beef to the Instant Pot, along with any accumulated juices.
Add the chopped carrots, potatoes, and celery to the pot.
Close the Instant Pot lid and set the vent to the sealing position.
Select the "Pressure Cook" or "Manual" setting and set the cooking time to 35 minutes on high pressure.
Once the cooking time is complete, allow the pressure to naturally release for about 10 minutes, then do a quick release to release any remaining pressure.
If you prefer a thicker stew, you can make a slurry by mixing 2 tablespoons of flour with a little water and stirring it into the stew. Select the "Sauté" function again and cook for a few more minutes until the stew thickens slightly.
Taste the stew and adjust the seasoning with salt and pepper if needed.
Serve the beef stew hot, garnished with fresh chopped parsley if desired.
